Fresh broccoli Salad

bunch broccoli

6 slices bacon
1 cup mayonnaise (you could use fat free)
2 tablespoons sugar
2 tablespoons cider vinegar
2-4 tablespoons dry roasted sunflower seeds
  1. Wash and drain the broccoli and cut into flowerets.
  2. Save the stems.
  3. With a vegetable peeler peel the outside of the stems and cut into bite size pieces.
  4. (Discard the very bottom of the stems where it is thick and tough.) Fry bacon until crisp.
  5. Drain and crumble.
  6. Mix together mayo, sugar and vinegar.
  7. Pour mixture over broccoli and add bacon.
  8. Mix.
  9. Add sunflower seeds and mix so dressing covers all ingredients.
  10. Cover and refrigerate
